In the heart of Provence, La Table du Ventoux and its terrace offer the best of this beautiful region.
Chef Thomas Lesage puts Provence centre stage in his cooking. Based on the best local and seasonal produce, he paints his vision of bistronomic cuisine, rich in colour and nuance.
‘The essence of a recipe is not to transform the product, but to accompany it, to sublimate it in what is most noble: its original taste'
Thomas instils this philosophy in every member of his team, so that together they can develop a common approach.
La Table du Ventoux and its panoramic terrace offer tasty, light cuisine at lunchtime, in keeping with the region's sense that life is good.
An address not to be missed! On the menu: sharing dishes with a Provencal flavour, from midday to 3pm, non-stop. As the seasons change and new dishes arrive, you can rediscover a new Provence in each dish on the menu. For a moment, you’ll get caught up in the breathtaking view of the surrounding countryside, the expansive vineyards and fields, until you forget all about time, just enjoying the moment to the fullest. It’s a way of encouraging families and friends to stay longer at the table, in a peaceful atmosphere somewhere between a ‘Sunday lunch’ and a ‘holiday meal’, where late risers are also welcome.
For dinner, Chef Thomas Lesage reinvents his bistronomic menu. Creative and contemporary, it draws on the best of the South of France - from the Vaucluse lands to the Mediterranean basin.
Throughout the year, local and seasonal products are given pride of place, such as fresh vegetables from the market, poultry from Mazan, rice from the Camargue, goat’s cheese from the Ventoux and strawberries from Carpentras. As for the barbecues and planchas, they give pride of place to lamb from the Alpilles and pork from Ventoux. The beating heart of the hotel, La Table du Ventoux is a place where every guest and connoisseur of the region can enjoy a moment of sharing. This commitment to promoting local products has been recognized, as La Table du Ventoux has earned two Écotable macarons, which certify the reduction of environmental impacts.
The Brunch
Every Sunday, don’t miss the friendly and festive brunch, a true institution at Hôtel Crillon le Brave. It’s the perfect occasion to savor local and international flavors with a generous buffet filled with sweet and savory delights: fougasses, grilled meats and fish of the day, fresh salads, regional cheeses, and an indulgent dessert selection.
Brunch is €68 per person excluding drinks and €35 per child aged 5 to 11, including juices. Complimentary for children under 5.
From an early age, Thomas Lesage was immersed in the world of cuisine. Growing up in his family’s hotel-restaurant in Brittany, he quickly learned to cook to lend a hand to his parents. His cooking is inspired by the joy of gathering around a table with family and by his deep love of nature. Chef Thomas Lesage also draws inspiration from the diverse culinary cultures he discovered during his travels, particularly in Latin America. His cuisine pays tribute to the richness of these influences, turning each dish into an authentic and creative expression of local treasures.
At Hôtel Crillon le Brave, inspiration is never far, it’s all around him. For him, this exceptional setting offers the perfect balance between precision and the freedom to experiment.
The song of the cicadas and the sound of the church bell set the rhythm for the days and evenings.
From breakfast to dinner, guests can rediscover this majestic setting that seems straight out of a Paul Cézanne painting, illuminated by the first rays of sunlight or the glowing hues of dusk.
The restaurant will reopen on April 3rd, 2026.
